SERVES 1
INGREDIENTS
2 avocados
Drizzle of lemon juice.
Drizzle of olive oil.
Quarter teaspoon salt.
1 teaspoon black pepper.
1 teaspoon garlic granules.
1 teaspoon curry powder.
1 medium slice of white bread - I like one with wheatgerm and calcium.
1 tablespoon pumpkin seeds.
Butter for bread.

METHOD
1. Peel the avocados; in a large bowl mash half of one of the avocados; slice the other half along with the second and place in a second bowl. Drizzle lemon juice into both bowls; cover the second bowl with foil and place straight in the fridge in preparation for the omelette and casserole recipes.
2. Drizzle olive oil over the mashed avocado and stir; season with salt, pepper, garlic granules and curry powder.
3. Toast the bread; in a small skillet dry fry the pumpkin seeds on a low heat for 2-3 minutes. Butter the bread; place the mashed avocado onto the bread and scatter the pumpkin seeds on top.
4. Cover the bowl of remaining mashed avocado with foil and place straight in the fridge.
