I LIKE THIS RECIPE BECAUSE ... this is great if you have a busy morning as you will be fuller for longer thanks to the fat and fibre in the avocado making you feel fuller for longer. The zesty flavours of the curry powder will kick-start your day and get you set for whatever is ahead of you.
1/2 ripe avocado
Drizzle of lemon juice
Drizzle of olive oil.
Quarter teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic granules
1 teaspoon curry powder
1 medium slice of white bread - I like one with wheatgerm and calcium
1 tablespoon pumpkin seeds
Butter for bread
1. Place the peeled avocado in a large bowl and mash with a fork or potato masher.
2. Season with salt, pepper, garlic granules and curry powder.
3. Toast the bread; in a small skillet dry fry the pumpkin seeds on a low heat for 2-3 minutes. Butter the bread; place the mashed avocado onto the bread and scatter the pumpkin seeds on top. The pumpkin seeds when toasted will enhance the simple tastes of the avocado on toast as they give a smoky flavour to the meal. Fab!
