GOOD FOR YOU BECAUSE ... cucumbers are composed of about 96% water, therefore, they are especially effective at keeping you hydrated, which is necessary on a hot day.
Serves 4
2 tablespoons olive oil
1 red onion peeled and sliced
4 tablespoons garlic granules
4 tablespoons dried herbs
2 tablespoons white pepper
1/4 teaspoon salt
400g cucumber washed and chopped
300g celery washed and sliced
750 ml vegetable stock
4 tablespoons paprika granules
2 tablespoons honey

1. Drizzle the olive oil into a soup pan; warm throough for 2-3 minutes. Then, add the red onion, garlic granules, dried herbs, white pepper and salt. Sauté on a low heat for 5 minutes.
2. Add the chopped cucumber and celery; cook for a further 5 minutes. Pour in the stock, stir in the paprika and honey. Bring to the boil and simmer for 20 minutes.
3. Remove the pan from the heat, using a hand blender puree until smooth. Pour into a jug, cover over and place in the fridge for 3 hours or until completely chilled. Decorate each bowl with a handful of pumpkin seeds.
