GOOD FOR YOU BECAUSE ... eating chocolate may help brain function.
Serves 4
Ingredients
200g chocolate (make sure you get a bar with at least 70% cocoa dark chocolate)
2 tablespoons butter
6 egg whites
3 tablespoons brown sugar
4 tablespoons whiskey
Spray cream (for decoration)
Cocoa powder (for decoration)
Method
1. Boil a pan of water; place the chocolate and butter into a bowl. Hover the bowl into the pan to enable the chocolate to melt. I say hover as you do not want the bowl to sink into the water!
2. In a second bowl, whisk the egg whites to a peak; add the sugar and re-whisk to ensure a thick consistency.
3. Once the chocolate has melted, remove from the heat. Leave to cool for 5 minutes, then stir in the egg whites and repeatedly whisk to combine with the chocolate to form a mousse mixture.
4. Pour in the whiskey; stir again to combine. Pour into chilled glasses; squirt cream on top and sprinkle with cocoa powder. This recipe is a great desert to serve after my sausage and mash recipe.
