Drizzle olive oil.
1 teaspoon pepper.
1/4 teaspoon salt.
1 teaspoon dried herbs.
1 teaspoon garlic granules.
1 red onion washed and sliced.
1 leek washed and chopped.
1 kg mussels cleaned; disregard the ones which will not open (you can buy cooked in packaging which is easier. Drain the sauce as it will not blend well with the guinness).
250g guinness.
50 ml cream.

1. On a low heat, drizzle the olive oil into a large skillet; season with pepper, salt, dried herbs and garlic granules.
2. Sautee the onion and leek for 5 minutes.
3. Add in the cooked mussels or washed mussels; do not add those that will not open, and cook for a further ten minutes. Stir in the guinness and cream; cook for a further ten minutes and serve with warm crusty bread.
