GOOD FOR YOU BECAUSE ... salmon is full of Potassium which will ensure your organs function properly.
Serves 4
2 tablespoons olive oil (for the salad)
2 tablespoons black pepper (for the salad)
1 tablespoon salt (for the salad)
2 tablespoons garlic granules (for the salad)
1 onion peeled and hopped (for the salad)
1 red pepper de-seeded, washed and chopped (for the salad)
1 yellow pepper de-seeded, washed and chopped (for the salad)
200g button mushrooms (for the salad)
2 tablespoons peanut oil (for the prawns and salmon)
200g prawns (for the prawns and salmon)
100g Smoked Salmon (for the prawns and salmon)
2 tablespoons salt (for the prawns and salmon)
2 tablespoons white pepper (for the prawns and salmon)
2 tablespoons ginger granules (for the prawns and salmon)
2 tablespoons garlic granules (for the prawns and salmon)
2 tablespoons Chinese Five Spice (for the prawns and salmon)
Bunch spring onions (for the prawns and salmon)
Juice from 1 lime (for the prawns and salmon)
10 ml White wine (for the prawns and salmon)
1 little gem lettuce washed and dried
12 green olives pitted (for the salad)

1. Pour the olive oil into a small saucepan; add the black pepper, salt and garlic granules warm through for several minutes.
2. Add the red onion, red pepper, yellow pepper, button mushrooms and tomatoes and sauté for 5 minutes.
3. Drizzle the peanut oil into a skillet and warm on a low heat; add the prawns and smoked salmon.
4. Season with the salt, pepper, ginger, garlic and Chinese Five Spice. Then add the spring onions, toss together with the lime juice and white wine.
5. Make minature salad bowls using the rocket leaves and fill each one with the salmon prawn mix. Scatter in a few olives to each basket. Make as many as you want!
5. Serve with warmed bread and the red pepper, tomato and mushroom salad on the side.
