GOOD FOR YOU BECAUSE ... peaches are good for your heart.
Serves 4
INGREDIENTS
2 x 220 g canned peaches
8 tablespoons balsamic vinegar - the leading ingredient in my roasted vegetable salad recipe, avaliable in my Change Now Anxiey Course meal plan
3 egg whites
300 ml double cream
8 tablespoons cinnamon granules
METHOD
1. Empty the cans of peaches into a small saucepan, stir in the balsamic vinegar and bring to a boil. Fold in the egg whites and simmer for 15 minutes.
2. Remove from the heat; cover and chill in the fridge for 3-4 hours.
3. In a small bowl, mix the cream into the peaches to combine, then distribute to four ramekin dishes.
4. Dry cook the cinnamon granules on a low heat; lightly dust each ramekin as a glaze and serve immediately.
